Step 1: Turn off the Fryer and Cool the Oil
Safety first! Before cleaning your deep fryer, turn it off and let it cool down. When emptying your fryer or cleaning it, always let the oil cool. Hot oil can burn you badly, so don’t take risks.
Step 2: Empty the Tank
Once the oil has cooled completely, drain it from the fryer.
Depending on your model of the fryer, you may have different ways to drain. You can drain fryers with built-in filter systems into an internal tank. However, if you don’t have an internal filter, drain the fryer how you typically would.

Step 3: Preliminary Scrub
After the grease has drained, it’s time to use your elbow grease.
Remove as much gunk as possible using a grease-cutting soap and a decent scrubber. You could use a soft-bristled brush, but you may need a scraper. However, never use a metal scrubber on your fryer.
Try to remove any food particles. If you’re unable to remove all of them, that’s okay. This step is simply a preliminary scrub to loosen everything up.
Step 4: Fill With Water and Cleaner
Ensure your drain valve is closed, and fill the deep fryer with water and cleaning solution. Fill it with the same amount that you would with oil.
Because every fryer is different, you’ll want to check what cleaner is best for your fryer. The cleaner will kill bacteria and lift more residue than scrubbing alone could.
Step 5: Boil
When ready, turn the fryer back on and let the soapy water boil for about 20 minutes. This step will ensure the cleaner is actively working and removing any stuck bits of food.
Step 6: Deep Scrub
Take extra caution during this step! After the water has boiled, scrub the fryer with a heat-resistant nylon brush. Making sure you clean the sides and the bottom. Use an “L” shaped nylon brush with a long handle to scour the bottom of the heat exchanger tubes.
Some use baking soda to remove extreme cases of build-up. Put some baking soda in a bowl and add enough hot water to turn it into a paste. Work that into areas of excessive build-up and scrub away.
Step 7: Dump Water and Wipe Down
After letting the water cool, you can drain it into a bucket or a drain.
When dumping your boil-out water, do not dump it into your oil collection bin, as it would ruin the ability to recycle your used oil! Instead, toss it down a drain with a grease trap.
Wipe down the fryer’s interior to eliminate any excess debris.
Step 8: Rinse and Dry
To ensure you’ve removed all the cleaning solution, run some hot water through the fryer. Now, you’re ready to return to regular business with clean oil and a better product.
